Misplaced Priorities - Losing Sight of the Prize

Before her death, my Granny used to tell me stories about growing up in the south.  I can still remember her describing the first time she met the woman who would become her mother-in-law, “Big Mama”.  Big Mama was in the kitchen (as she often was, it would seem) preparing a meal.  Without a moment’s hesitation - and in mid-sentence - she stepped through the screened door and into the yard, grabbed an unsuspecting hen and snapped its neck.

After finishing the needful and hanging Henny Penny upside down from the clothes line to drain, she stepped back into the kitchen and picked up right where she left off without missing a beat. Continue Reading »

Eat your oatmeal!

For years I thought I was the only kid in town who was subjected to the seemingly enormous bowl of thick, sticky goo for breakfast all winter long. It seems though that I have to make an apology to my mother.

She wasn’t, as I then was convinced, trying to kill me. In fact, she was on to something that even she didn’t fully realize at the time. That bowl of oatmeal that I ate every day as a child was not only quite cheap, actually made me a little healthier too.

Frugal Recipes - Michael’s Egg Salad

Ingredients

  • 2 eggs
  • 2 tablespoons mayo
  • salt
  • pepper

Instructions

Eggs1. Hard boil the eggs (approximately 10 minutes) and set aside until they are cool enough to handle, then peel them.

2. Add eggs to a small bowl and chop until they are very fine. Personally, I use a food processor because I like mine to be smooth and ultra creamy.

3. Add just enough mayo to make the eggs stick together and flavor with salt and pepper to taste.

Michael’s Notes

This is admittedly a basic and very simple egg salad recipe but that is exactly what I intended when I made it. If you prefer a bit more oomph, consider this recipe a base from which you can add your own special touches and personal flair.

It is not recommended that you store egg salad for any longer than a day and always keep it in the fridge. for that reason I scaled this recipe down so that I make only as much as I will be able to use in two days.

To make preparation easier you can hard boil several eggs ahead of time since they will keep in the fridge for several days so long as they remain unpeeled until you want to use them.
